On November 24, the Iowa Craft Meats team was joined by central Iowa chefs and fellow pork industry leaders at The Recipe in Ames, Iowa. Calvin Schnucker, proprietor of The Good Butcher, shared the art and skill of meat cutting. He expertly demonstrated a shoulder fabrication, explaining each move and showcasing unique cuts of pork. Guests then enjoyed a cocktail hour and tasting stations featuring Iowa Craft Meats' Carver Ham, three flavors of Thick-Cut Bacon, Brined Tomahawk Steak, Twice-Cooked Pork Belly Bite Lollipops, and Pork Burger Sliders.
Following the tasting, Chef Brad Nelson, Former Vice President of Global Food and Beverage for Marriott International, alongside Chef Andy Barnard of The Recipe, led a masterful presentation of dishes featuring artisanal pork cuts from the shoulder. Dishes included a Pork Pastrami Reuben, a Flat Iron Pork Steak, Pluma Skirt Tacos, and a Delmonico Steak.
